The frozen prepared food and dim sum market keeps expanding globally. As classic yum cha items, crystal har gow (shrimp dumplings) and pork & prawn siu mai are in rising demand from overseas Chinese supermarkets, restaurants, catering chains and central kitchens. However, many dim sum manufacturers hit bottlenecks while scaling up production. Har gow and siu mai carry strong handcraft features; regular dumpling machines are not suitable. Automated production often causes wrapper cracking, poor shaping, inconsistent appearance and texture that fails to match authentic restaurant dim sum, limiting production capacity growth.
The biggest technical hurdle for har gow lies in its translucent tapioca starch wrapper. The crystal skin is ultra-thin and low in tensile strength, highly sensitive to ambient temperature, humidity, resting time and pressing thickness. Conventional filling machines apply uneven pressure, leading to wrapper breakage and filling leakage at high speed. The finished product loses the signature transparent look after steaming. Pleating is another pain point: mechanically formed pleats look stiff and irregular, hurting product grading and market price.
Siu Mai presents a different set of difficulties. Its thin wrapper leaves the top filling exposed. The sticky pork and prawn filling is easy to squeeze out or collapse during conveying, arranging and tray loading. Minor moisture changes in filling will cause big weight variation from piece to piece. Quality gaps become more obvious after IQF freezing. Worldwide dim sum factories also struggle with labor shortages, high turnover of skilled dim sum chefs, low manual output and poor batch traceability.
Proven automated solutions focus on full-process customization, instead of simply replacing manual workers. They cover recipe adaptation, forming mould design, filling feeding, temperature & humidity control, pre-freeze conveying and tray arrangement.
Automated Har Gow Production Solution
Dedicated har gow forming machine with adjustable skin pressing unit to control wrapper thickness precisely. Flexible forming mould reduces pulling stress to minimize cracking. Adjustable pleating unit replicates handmade pleat patterns. The production line works with constant temperature & humidity control system to stabilize tapioca dough property, ensuring a chewy, translucent texture after steaming. It supports whole prawn and chopped prawn filling for premium har gow wong and bulk standard shrimp dumplings.
Automated Siu Mai Production Solution
Custom siu mai forming head fits square thin wrappers. Soft metered filling feeder keeps stable portion weight. Gentle conveying and auto tray loading avoid squeezing the exposed filling. It can connect with tunnel freezer and packing machine to cut manual handling, deformation and cross-contamination. All recipe and size parameters are saved digitally for fast changeover, less reliance on experienced operators.
Complete Line & Technical Support
Beyond standalone machines, we provide process testing, filling recipe tuning, factory layout planning, sample trial, overseas on-site installation and commissioning. We have delivered projects for dim sum factories in Southeast Asia, Europe, America, Russia and other regions. Our equipment helps customers shift from semi-manual operation to fully automatic production, cut labor cost, stabilize batch quality and secure long-term orders from supermarkets and catering groups.
Industrialization of Cantonese dim sum does not mean sacrificing traditional taste for higher output. Advanced food machinery helps preserve authentic yum cha quality while enabling stable mass production and export. More central kitchens and frozen food plants overseas are switching to integrated har gow & siu mai automatic lines to replace inefficient manual work. If you plan to upgrade your dim sum workshop or build a new frozen dim sum factory line, contact us for trial production plan and sample testing.
