Chain catering central kitchens often face flexible capacity challenges during business expansion. They need fresh dumplings for in-store service during peak hours, while producing bulk quick-frozen dumplings for inventory in off-peak seasons. Deploying two separate production lines requires heavy investment and large workshop space, which is not practical for many operators. Recently, the XSJ small dumpling machine has been successfully installed at a chain catering central kitchen, delivering a single-machine solution for dual-mode fresh-made and quick-frozen dumpling production.
The client in this project runs a multi-outlet catering brand. Previously, dumplings were hand-folded, leading to rising labor costs and inconsistent product quality, including uneven weight and unreliable sealing. Limited workshop space ruled out large-scale fully automatic dumpling production lines. The core requirement was straightforward: one machine that can produce fresh dumplings daily for restaurant dine-in orders, and also run continuous production for quick-frozen dumplings, to supply pre-packaged takeaway products and supermarket frozen food lines.
The XSJ small dumpling machine meets this dual-production requirement. Operators can easily adjust wrapper thickness and filling volume. Dumplings come out with uniform shape and tight sealing, resistant to breaking during boiling and retaining good form after freezing and reheating. It occupies a small footprint and is easy to install without major workshop renovation. Production modes can be switched by adjusting parameters. Under fresh-made mode, finished dumplings are delivered to stores for same-day use. With parameter adjustment, it continuously manufactures dumplings that go through cooling and freezing processes to become standardized quick-frozen products.
After implementation, the central kitchen reduced labor input for dumpling making and greatly improved product consistency. The machine runs reliably and requires little maintenance. Kitchen staff can operate and perform basic maintenance after short training. One machine serves two business streams, cutting equipment investment and workshop reconstruction costs. The brand gains flexibility to handle fluctuating orders and develop both dine-in fresh dumplings and frozen prefabricated food products.
We provide customized machine commissioning, on-site installation training and after-sales maintenance services for central kitchens, prefabricated food factories and chain catering headquarters according to different capacity requirements.
