Automatic Khinkali Making Machine Project Signed To Support Brand Expansion For Russian Food Factory

Recently, Chengdu Wonderful Serendipity Food Machinery has officially signed a full‑set automatic khinkali (Georgian soup dumpling) production line project with a local Russian frozen‑food manufacturer. The integrated solution includes khinkali forming main unit, pre‑processing dough mixing equipment. It connects seamlessly with the client's existing spiral IQF freezer, packaging and warehouse system. This project helps the factory achieve large‑scale khinkali manufacturing and addresses long‑standing production pain points: heavy reliance on manual folding, labor shortage and inconsistent finished‑product quality.

Khinkali, the traditional Georgian soup dumpling, is a highly‑popular frozen semi‑finished food across Eastern Europe. It features multi‑pleated twisted top knots, with juicy broth‑rich meat fillings sealed inside dough wrappers. Strict requirements apply to pleat tightness, wrapper thickness and filling dosing accuracy. Previously, most Russian factories produced khinkali manually, suffering from high labor cost, limited output capacity, inconsistent weight and uneven pleats, which made large‑volume standardized supply for supermarket retail channels difficult. Driven by growing local consumption of frozen ready‑made meals, this Russian manufacturer sought automated line upgrading to expand its khinkali product portfolio and capture bigger market share.

The client already operates our GQ series dumpling machine and WHP series wonton machine for dumpling and wonton production, with solid recognition for equipment reliability and overseas after‑sales support. Instead of purchasing standalone machinery, the customer adopted our custom turn‑key solution. The new khinkali forming unit is integrated into their existing workflow, compatible with upstream pre‑processing units such as vacuum dough mixer and frozen meat grinder. Finished khinkali are automatically arranged on trays via WT‑060E tray‑loading workstation before entering spiral IQF freezer, followed by packaging, palletizing and cold‑storage warehousing. The whole line enables flexible multi‑SKU production: dumplings, wontons and khinkali can all be manufactured on one integrated plant.

Key Project Challenges & Practical Solutions

1. Reproduce Hand‑Made Pleated Shape and Broth‑locking Performance

The core technical challenge for khinkali automation lies in multi‑fold twisted top forming. Poor pleat sealing will cause broth leakage during boiling or IQF freezing. Our team carried out special parameter tuning according to local dough elasticity and high‑moisture meat filling formula. We optimized wrapper rolling, filling feeding and pleating mechanism parameters. Machine‑produced khinkali replicate classic hand‑twisted geometry, guaranteeing good broth‑holding performance. Product weight and pleat uniformity fully meet local supermarket quality standards.

2. Adapt to Low‑Temperature Workshop Environment & Local Power Supply

Russian frozen‑food workshops feature wide temperature fluctuation and high humidity. All main machine frames adopt food‑grade SUS304 stainless steel. Electric components are selected for cold‑resistance and moisture‑proof performance, with full modification matching local industrial voltage specifications. Signal interconnection is implemented between new khinkali line and client's existing freezing & packaging machinery to minimize material jam and unexpected shutdown.

3. Alleviate Labor Pressure and Realize Brand‑expansion Target

Food processing industry in Russia faces widespread labor deficit, and skilled khinkali folding workers are especially hard to recruit. After commissioning, this automated line replaces more than ten manual operators and reduces dependency on skilled artisans. Capacity margin is reserved on the whole line. When brand sales grow in future, output can be boosted without heavy civil‑work reconstruction, supporting the client's channel expansion across Eastern European markets.
